The Fours of Food Storage

1. Container

Airtight containers increase storage life by reducing exposure to oxygen! After purchasing foods like beans or grains, store them in airtight containers to keep them fresh!

2. Temperature

Temperature is the most important factor in how well dried foods store. According to the US Department of Agriculture, each 10 degree Fahrenheit drop in temperature doubles the storage life of seeds. This relationship between temperature drop and storage life is true from room temperature to freezing.

3. Moisture Content

The amount of water in food can affect the appearance, texture and flavor of a food. Foods with a lot of moisture can spoil even inside containers. Fresh fruits and vegetables contain the most water, therefore they are more likely to spoil sooner. Dry beans, nuts, seeds, grains, and flours have less moisture, which explains their longer shelf life.

4. Oxygen

Air contains oxygen which can negatively affect certain foods. Over time oxygen allows certain types of bacteria, mold and yeast to grow on the surface of food.
