Choosing to make half your plate full of veggies, is easier than you think!  Whether fresh, frozen or canned, choose an array of colors representative of the colors of a rainbow.  Veggies can be added to soups, stews, casseroles, salads, smoothies, cereals, wraps and so much more!  Purchasing vegetables that are in season maximizes flavor at a lower cost.  Try visiting your local farmer’s market for delicious locally grown produce.  For added convenience, pre-cut veggies can help increasing your consumption as well.  So go ahead, have some fun and put your creativity to work for you to insure a healthy nutrient intake of vitamins and minerals by increasing your vegetable intake.  Happy munching!
