One of the Spring 2023 Food Science Capstone Teams (Xingrui Fan, Anna Bica, Young Kim, Jordan Roth) collaborated with Cornell Maple Program and developed Maple Marshmallow Spread recipe.
Typical marsmallow spread contains either corn syrup or cane sugar as a sweetener. Maple Marshmallow Spread is sweetened with Maple Syrup. Maple Syrup is a natural sustainable sweetener that has a distinct maple flavor and also contains minerals, amino acids, Vitamin B3 (niacin), Vitamin B2 (riboflavin), and antioxidants.
