FDSC1101 Freedom Of Expression ice cream flavors

This Fall Alina Stelick represented Cornell Sensory Evaluation Center on the panel of the judges evaluating Food Science 1101 (Instructor:  Dr. Christopher Loss ’96, M.S. ’01, Ph.D. ‘05) new ice cream flavor creations based on Cornell’s Freedom of Expression theme.  The judges had to pre-evaluate the samples individually on key sensory characteristics, following a standardized sensory evaluation ballot, and then finalize their ratings based on “live” team presentations and Q&A on November 29th, 2023.

A total of eleven different flavors were presented by student teams.  The concepts were very diverse and creative.  Students delivered a good variety of great flavors, often having overcome technical challenges in product formulation.

We can’t wait to see at least one of them for sale at the Dairy Bar next Spring!
