Thanksgiving Dinner for One

If you traditionally spend Thanksgiving with extended friends and family, this year may be a little different. Even if you are celebrating on your own, it is still possible to enjoy some of the classic Thanksgiving flavors. In this post, we are going to cover a single sheet-pan recipe that brings the warmth of the holidays. This recipe includes classic flavors like roasted turkey, sweet potatoes, and green beans!

Ingredients:

For roasted turkey:

  • 2 pounds of turkey meat
  • 2 tbsp oil of choice
  • 1/2 tbsp dried thyme
  • 1/2 tbsp dried rosemary
  • 1/2 tbsp dried oregano
  • salt and pepper to taste

For roasted sweet potato:

  • 1 sweet potato
  • ¼ tsp oil
  • salt and pepper to taste
  • cinnamon to taste

For roasted green beans:

  • handful of green beans
  • salt and pepper to taste

Instructions:

For this recipe, you can adjust the seasonings and portions based on your personal preferences. Cooking time for the turkey meat would vary by its weight, and it will require approximately 20 minutes of cooking per pound of meat.   1. Preheat the oven to 375° F. Line a large baking tray with parchment paper.
  2. In a bowl, mix all spices and seasonings for the turkey.
  3. Carefully rub oil and then seasoning mix all over the turkey meat.
  4. Place seasoned turkey onto the lined baking tray and insert the thermometer probe into the thickest point of the meat. 
  5. Wash the sweet potato and dice it into rough 1-inch pieces. Toss the sweet potato pieces in a bowl with oil and seasonings. Spread the sweet potatoes onto the remaining space on the baking tray, leaving some space for the green beans. 
  6. Wash and trim green beans. Spread the green beans onto the remaining space on the baking tray and sprinkle on the seasonings.
  7. Place everything in the oven and bake for about 40 minutes. The temperature on the thermometer should register 165° F.
