Kids in the Kitchen: Veggie Snacks

Similar to fruits, vegetables have many nourishing health benefits. However, many kids are picky eaters who turn up their noses and avoid vegetables. One way to end the mealtime battles is by getting kids involved and making the process of eating fun and enjoyable. It is time to unleash your creativity and try the following recipes with your kids for some fun and creative ways of serving veggies! 

 

Mini-Veggie Wagon

The recipe below is just one of the many ways you can make veggie wagons. It is time to get creative and come up with your own design using vegetables of your choice!  See our pepper train as an example.

Ingredients:

  • 1 stick of celery
  • 4 slices of cucumber (sliced thick)
  • Assorted vegetables such as carrots, broccoli florets or bell peppers
  • Vegetable dip (optional)

*you will also need toothpicks.

Directions:

  • Place one cucumber slice on the end of a toothpick for a wheel.
  • Stick toothpick through celery and add another cucumber slice. Repeat to
    form the body of the wagon and the four wheels.
  • Pile the assorted vegetables on the celery stick to form the contents of the
    wagon.
  • Eat and enjoy with dip!

Ants on a Log

Ingredients:

  • Celery sticks
  • Peanut butter
  • Raisins

 

Directions:

  • Wash the celery and cut it into pieces (about 5 inches long).
  • Spread peanut butter in u-shaped part of celery, from one end to the other.
  • Press raisins into peanut butter.
  • Enjoy your ants on a log!
