Have you ever overslept and had to skip breakfast in order to get work on time? Or maybe you’re not a morning person, and the thought of cooking in the morning is unimaginable. Meals that are quick and easy to make are ideal and can get you on your way.
Here are two of my favorite breakfast meals that can be made in the microwave and will take 10 minutes or less!
Spinach Frittata
This egg-based Italian dish is often made in a stovetop or in the oven. This process normally takes 45 minutes to make. When you’re in a crunch for time, trade in the skillet for a microwave safe cereal sized bowl! Gather the ingredients below and follow the step-by-step directions to make a spinach frittata!
Ingredients:
- 2 eggs
- ¼ cup fat-free evaporated milk (or whole milk)
- ½ cup fresh spinach leaves
- 1 small tomato
- ⅓ cup shredded part-skim mozzarella cheese
- Cooking spray
- Salt and pepper
Directions:
- Spray a microwave safe cereal sized bowl with cooking spray.
- Wash the spinach, pat it dry, remove the stems, and tear it into edible sized pieces. Toss into bottom of bowl.
- Dice the tomato.
- Sprinkle the cheese on top of mixture.
- Beat the two eggs and milk in a separate cup lightly with a fork, pour over the mixture in the bottom of the bowl. Sprinkle lightly with salt and pepper.
- Microwave on high for 3 minutes.
- Let it cool for about 1 minute and enjoy!
Cinnamon-maple Breakfast Quinoa
Are you tired of your regular bowl of oatmeal in the morning? Try this breakfast quinoa recipe! Quinoa is packed with protein and fiber, giving you a kickstart your morning! This microwave recipe will take 10 minutes. You can further cut the time in the morning by preparing it the night before. Follow the instructions and directions below for 10-minute cinnamon-maple breakfast quinoa!
Ingredients:
- 1/2 cup quinoa
- 1 cup cold water
- 1/2 teaspoon cinnamon for garnish
- 2 teaspoons butter
- milk or cream, to taste
- maple syrup to taste
- banana slices (or other fruit toppings)
Directions:
- Place quinoa and water in a microwave safe cereal bowl and rinse well.
- Drain quinoa, then stir in 1 cup cold water, 1/2 teaspoon cinnamon and 1 teaspoon butter.
- If you are preparing this the night before, you can cover the bowl with foil or saran wrap, and place in the refrigerator.
- Microwave on high for 4 minutes. Stir and microwave for 3 more minutes. Remove from microwave,
- Cover with foil and let it sit for 2 minutes. Fluff quinoa and stir in remaining butter. Divide between 2 bowls and top with milk, maple syrup, banana slices and cinnamon to taste.
You can pair both of the meals above with a glass of milk and fruit for a more complete meal.
