Brighten Your Meal with Butternut Squash

Butternut squash is a gourd, similar to pumpkin. It is harvested mostly in the fall, but is available year-round. In addition to buying them fresh, frozen pre-cut pieces can also be found in the frozen produce section. Butternut squash has a subtle sweet taste with many health benefits. Although butternut squash tastes sweet, it is low in calories and packed with a variety of vitamins. One cup of butternut squash contains more than 200% of our daily requirements for vitamin A, yet it has less than 100 calories.

Oven-roasted Butternut Squash

Prep: 30 minutes

Serving: 4-5 serving 

Ingredients: 

  • 1 medium sized butternut squash
  • Oil of choice, 2 tbsp

Instructions: 

  1. Preheat the oven to 400 ° F. Cover a baking tray with foil or parchment paper.
  2. Wash butternut squash and cut in half lengthwise. Scrape out the seeds.
  3. Cut squash into rough 1-inch pieces.
  4. In a bowl, toss squash pieces with oil.
  5. Spread squash pieces onto a lined baking tray and bake for 20-25 minutes or until tender and lightly browned.
  6. Serve with skin on, or trim skin if preferred.

You can add salt and pepper to taste. For more flavor, you can also toss the squash pieces with a little bit of cinnamon before baking.
