The impact of lighting in sensory evaluation

Studies have shown that lighting and color can influence our taste perception. One study found that the color of the plates used influenced how the flavor of that particular food was perceived. Even ambient lighting has been shown to influence our taste perception. Here at the Cornell Sensory Evaluation Center, we have the ability to control factors like lighting when products are being tested.
