The Milk Sensory Panel has been an integral part of the Milk Quality Improvement Program for over 40 years. This panel evaluates milk and, occasionally, other dairy products throughout their shelf life. The resulting sensory scores are communicated back to producers to help them enhance product quality. Additionally, these scores contribute to the criteria used in awarding the New York State Fair Best in Class awards.
