Highlights from Cornell Sensory Evaluation Center

We’ve been busy here at Cornell Sensory Evaluation Center! We want to thank all the panelists who participate in our studies, from those who we see so often we can call them by name to the curious walk-ins who join us for the first time. Here is a look back at some of the highlights from Spring 2024 at Cornell Sensory Evaluation Center.

Sensory Studies

Cornell Sensory Evaluation Center supported many student-led studies, from graduate studies focused on new cheese products and preference of artificial sweeteners to end-of-year projects for undergraduates in the Food Science Capstone Class. Sensory Evaluation Center staff led studies for external companies and product developers for products such as tequila, pasta, apples, sports beverages, and more!

 

Specialized Training

In March, Cornell Sensory Evaluation Center and Department of Food Science hosted a two-day Sensory Immersion Experience in Dairy for professionals in the food industry. Over a dozen attendees, coming from as far as El Salvador and Guatemala, came together on Cornell’s campus to hone their tasting skills and sensory perception around dairy products. Speakers included Cornell faculty and industry professionals specializing in dairy milk, cottage cheese, yogurt, and cheddar cheese products. Stay tuned for information about next year’s workshop planned for mid-March 2025!

 

What is sensory evaluation?

Sensory evaluation is a scientific method used to measure, analyze, and interpret responses to specific characteristics of products. Through sensory evaluation and sensory testing done in the booths of the Sensory Evaluation Center here at Cornell University, we help product developers assess human responses to products. The data collected through sensory studies provides product developers with the information they need to create higher quality products that appeal to consumers. Sensory testing reduces risk and uncertainty in decision making around product development and improves the likelihood that a product will be a success.
