Brewing Process Dimethyl Sulfide Measurements Using a New Calibration Procedure for Gas Chromatography with Flame-Photometric Detection

Dimethyl sulfide (DMS) levels from mashing through lagering were measured using a successive approximation procedure for calibrating a flame photometric detector. The results obtained for mashing were higher than those reported previously. DMS concn. declined sharply on boiling and remained relatively constant during fermentation and lagering, in good agreement with the results of other workers. Different calibration methods yielded results which differed by as much as 180%.
