Brewing Applications of High Performance Liquid Chromatography

The advances in hardware and column packings which have made high
resolution liquid choromatography (LC) possible are discussed, and a
comparison of LC with TLC and paper and gas chromatography presented. A survey of some of the columns and techniques currently available in high performance liquid chromatography is included. A discussion of the application of LC to materials of current or potential interest in brewing covers: proteins, peptides and amino acids; nucleic acids, nucleotides and nucleosides; carbohydrates; lipids; polyphenolics; hop components; flavour compounds; and toxic contaminants.
