Determination of Ammonia and Brewery Applications of Specific Ion Electrodes

Rapid and simple detn. of ammonia in beer and wort is possible with the
ammonia-specific ion electrode. 2 different quantitation methods, (i) a
standard curve and (ii) the known addition technique, were applied to
ammonia detn. in beer; (ii) was found to be much more satisfactory for
different beers, but (i) required less time to analyse many samples of
the same beer. (ii) was more precise and sensitive than the (iii) Conway
microdiffusion technique, although results were generally comparable;
however, (ii) requires about 10 min for each detn. vs. 12 h for (iii).
Both the electrode and Conway methods were affected similarly by
volatile amines, each giving high response for ammonia in the presence
of volatile amines, which were detected 10-20% as effectively as ammonia on a wt. basis.
