Comparison of methods for assessing colloidal stability of beer

Unchillproofed beer was treated with silicas of different types and particle sizes at three addition rates (150, 300 and 1000 mg/L) and examined by the saturated ammonium sulfate precipitation limit (SASPL), haze-active (HA) Protein, and Alcohol cooling tests as well as a forcing test. When the same silica was milled to mean particle diameters of 5.1, 9.1, 14.5, 20.6 and 24.4 µm and used to treat beer, performance was fairly similar on an equal weight basis. Silicas of different types, on the other hand, performed quite differently. The HA protein and alcohol cooling test results agreed well with the forcing test. The SASPL results were quite different from those of the other tests, which calls into question the value of this method.
