Eden Valley Cheese Company is a startup artisan cheese company that will be operating out of the renovated Valley View Cheese plant in Conewango, NY in Cattaraugus County.  The company will be producing cheese with organic milk sourced from the owners’ two organic dairies, as well as conventional cheese produced with milk sourced from the local Amish community from whom we rent the plant.  We are looking to recruit a highly motivated, hardworking, and creative individual with a passion for cheese making to serve as our plant’s Master Cheese Maker.  Initial plans are for the Master Cheese maker to be responsible for the production of cheese from approximately 100,000 pounds of Organic and Amish milk per day.  Further description of the position opening follows.

Position: Plant Master Cheese Maker

Duties and Responsibilities

The plant master cheese maker:

  1. Will supervise and participate in daily cheese production
  2. Oversee the training of all cheese production personnel and their continued improvement.
  3. See that production SOP’s and make procedures are being properly followed.
  4. Spearhead the development of new cheeses and improvements to current varieties
  5. Work with the Head Lab Technician  in investigation and resolution of quality problems
  6. Oversee cheese curing and aging (affinage) operations to see that peak condition and quality of the cheese is maintained.
  7. Perform objective performance evaluations of cheese making personnel.
  8. Maintain accurate and timely records and thoroughly reviews quality data on a continuous basis
  9. Coordinate with Plant manager on directing plant sanitation activities.
  10. Participate in maintaining and improving plant personnel and product safety.
  11. Perform other duties as assigned by Plant Manager

Reports to: Plant Manager

Requirements & Qualifications

The plant master cheese maker:

Shall have a thorough knowledge of all phases of cheese making and be able to train cheese making personnel

Shall be certified in HACCP

Have a good working knowledge of SQF practices

Shall have the math and communication skills necessary to fully perform his or her duties
