Pumpkin Patches appear it is fall!!

As pumpkins start to dot the fields throughout our area, we automatically think of fall and all the traditions that occur this time of year. Check out all the fun and educational offerings from Ag in the classroom:

Here are a couple of my favorite things to do with pumpkins:

 

Collect the seeds, wash them and pat them dry.

Mix with a tiny bit of oil, a sprinkle of salt and your favorite spices.

Roast in a 400 degree oven for about 15 minutes.

Let cool completely and enjoy a tasty snack.

 

Peel and cut your pumpkin into 1 inch pieces.

Toss with some olive oil, salt and pepper.

Roast in a 350 degree oven until soft.

Eat as is, toss in chili, chill and put in a salad, or add to other roasted vegetables and quinoa for great seasonal lunch entrée.
