My Vegan 5 day photos and stories

I am on the VEGAN 5 day Cornell Dining TEAM and I had a great experience this week dining on only VEGAN items . I am an avid fan of meats cheese and other dairy products to I was interested to see how our Vegan students ate here at Cornell Dining .  My first lunch was at Bear on North Campus and I had fresh baked pizza bread with herbs and a bowl of Vegan vegetable soup .I was very happy with my choices for my First meal . I could have also had a vegetarian burger and house made fries or a vegetable calzone but went with the vegetable soup and frsh baked bread ..YUM

Monday evening was Mardi Gras at RPCC and I always look forward to having some of my favorite items on Mardi Gras . Chef Hilda made it easy for all to eat wonderful foods from New Orleans . She had tranformed many items to be vegan and this made my day as I got all the smells and flavors of New Orlenas in my meal at RPCC .. Truth be told I really missed the grits and Grillades but after eating the other offering that were made with freshly ground spices and had so much depth of flavors I left happy  and proud to be working for Cornell .

I had more great vegan Meals at Northstar with Chef Harold and his skilled culinary TEAM.  Jean Tang made me a wonderful scrambled tofuand broccoli dish that would make anyone happy with flaovr added with fresh garlic and ginger .I could eat this all the time and be happy and satisfied .  Chef Cathy at Keeton House had a special on Wednesday evening called Wizard of Oz and had so many vegan items I was very happy Vegan creamed corn with soy milk was one of my favorites of the evening along with Vegan Apple Crumble .  I can see that it may not always be easy to eat Vegan but now my eyes have been opened by this process to look at every item and ask how can this be made for Vegans .Mashed potatoes are a very easy fix to make with EVOO and fresh herbs or roasted garlic or any number of other items to make the perfect mashed potatoes. Wednesday lunch time I sent out an email to my team and was joined by Melissa, Chef Cathy, and Chef Bryan at Becker House. I walked around to really check out what I was going to be able to eat. This process has made so much more aware of what I am eating and really thinking about my choices overall. I looked at Melissa and say WOW…we can eat almost everything here today! There were a ton of vegan options and they all looked really beautiful. I was excited to to be having my lunch with my teammates and to have some time to talk with the chefs about the food. Chef Tony stopped by our table to say hello and ask how everything was, I was very happy to tell him how great my lunch was and how impressed I was with all of the options.

There was a very appealing salad bar with lots of fresh veggies and a couple composed grain salads that looked delicious and sparked my interest immediately. But I have to say the star of the day was the fresh greens sauteed with hot peppers and tofu. The flavor was quite outstanding and the colors of the dish were just beautiful. You could tell by the cuts and the presentation that this super healthy, tasty dish was given some thought and the care and that time was given into its preparation!

I also found a bright green plate of steamed asparagus which was cooked just perfect! No sauce or butter to smother this delicious beauty was necessary – some things can look good naked even in the middle of winter! Both Melissa and I were going the same route as we met by the salad bar and chuckled that our plates were almost identical and how “green” they were. I went for the lentil salad which had fresh carrots, celery, green onions, red peppers, and maybe some cucumber, it was fresh and quite filling. Melissa tried both and raved about the chickpea salad. I recently read how lentils pack a ton of protein and are a very good source of cholesterol-lowering fiber so I was happy indulge. Lentils also provide good amounts of important minerals & B-vitamins and pretty much have no fat. With the Cornell Wellness Weight Loss Challenge around the corner: “Hey  teammates…eat lentils!!!” They only have 230 calories for a whole cup of cooked lentils and you will feel super filled up.

I guess I was starving at that moment because looking back at the picture of everything I ate I am really surprised I consumed that much! On top of the tofu stir fry, lentil salad, and asparagus I grabbed a bowl of perfectly cooked rice from the quesadilla station and added some black beans and a very peppery pico de gallo. I perused by the salad bar but I really didn’t want more greens so I just complemented my dish with some fresh crisp sugar snap peas and whole beets. This was the over kill- I grabbed a veggie burger! It was tasty but I do still love eating them with cheese and bacon…yes at my house I call them the garden of sin burger! Again for sure today no room for dessert but I heard North Star has Vegan Chocolate Cake from the bakery on the menu…maybe a late afternoon snack!

 

Lunch on the Go!

Trillium has a number of homemade and healthy salad food options. It does not matter if  you’re watching your waistline or looking to indulge in a well spiced hearty meal, it is definitely the place to have lunch. I was in-between stops and needed a Dairy free option to satisfy my taste buds.  Trillium did not disappoint  with its  fantastic Garden burger and fries!IMAG0100

So who says a Gluten/Dairy free diet has to be bland and boring??  I was starting to think so … eating apples and bananas with peanut butter, and all those plain vegetables blahh…..

But fear not, today I made it to Risley Dining for a “Lunch Extraordinaire.”  Who knew Tuan Tran could fry up delectable  scrumptiousness from rice noodles, kimchi, edamame, mushrooms, broccoli, carrots and chinese cabbage – topped with GF sweet soy sauce, and a dab of red curry sauce?  I carried on so about how good it was the rest of my table mates had their personal variations whipped up.  It might be a secret how fabulous this station is, however, the enthusiasm, motivation, and readiness to make your stir fry exactly the way you want by the cook should not be.  It was so yummy I forgot that I was pining for a piece of crusty bread and a big chunk of cheese!

Foursquare tells me I haven’t eaten at Risley Dining since last spring, and hard as it is to believe, I guess it’s been a while since I’ve visited this all-you-care-to-eat dining room! Honestly, I tend not to hit the AYCTE lunches too often, for fear I’ll eat too much.

The nice thing about Cornell Dining’s limitless lunches, though, is that it’s easy to load up on fresh vegetables and a big salad before going too far down the path to gluttony. At least this week I can avoid the pizza and pasta temptations without thinking twice about it. This afternoon at Risley, I started with the vegetables, including a bit of the roasted pepper and spinach frittata. It wouldn’t be vegan, but luckily, I’m not avoiding eggs and dairy this week. No “wheat” on the allergen card? I’m set!

The salad bar at Risley is even more varied than the one at North Star, where I end up more often. In addition to the hard-boiled eggs that can help turn a salad into a meal, Risley offers cubed tofu, feta cheese, and even tuna. Some fresh spring mix and spinach topped with soybeans, cherry tomatoes, sunflower seeds, feta cubes, and tuna seems like a good start. Are all the salad dressings gluten free, though? Hm, when did they start making the type size so tiny for ingredients lists? OK, this creamy caesar dressing has no ingredients that I need to worry about.

Lorna, Risley’s Chef/Manager, stopped by to see how our lunch was, and I took the opportunity to ask her if there was gluten-free pasta available. She said yes, and there’s gluten-free pizza crust available on request, too. Risley apparently has quite a few residents and regular customers who avoid gluten, so these items are always on hand, even if they’re not always out on display. I bet I could also have asked for gluten-free bread at the deli station.

Good to know I had these options, but I decided to round out my meal with one of Risley’s famous stir-fries. Not unlike Robert Purcell’s Mongolian Grill station, where you pick out a bowl full of vegetables and then hand them over for stir-frying with noodles or rice or sauces, Risley’s stir-fry station has loads of fresh veggies, and a choice of chicken or shrimp or tofu. I opted for rice noodles and the red curry sauce, which is one of two sauces that’s gluten-free. The stir-fry folks rinse and wipe out the pans between batches, but will start with a perfectly clean one upon request, to avoid cross-contamination.

Lorna told us her staff will gladly prepare and plate food in the kitchen, instead of in the serving area, for customers who are especially sensitive to gluten or other allergens, and want to be certain there’s no contamination. She says convection ovens make cross-contamination of allergens like gluten more likely because of the airflow, and her staff is trained to avoid contamination to the extent that’s possible.

What’s for dessert? Those gluten-free brownies I talked about on Monday are available here, too, and Lorna says they often have GF chocolate chip cookies, too, but they’re out of them today. I often skip dessert anyway, so I went the fruit route today. I certainly had plenty to eat at lunch!

Vegan Day 3

I am at Synapsis with Rhiana and we both wanted flatbreads for lunch. Anna was helpful in suggesting two flatbreads I could eat as a vegan. I chose the 2 (cheese) one.  I think that w the pizza needs to be perked up with either vegetables or herbs.

I had it in my mind that a lunch meeting at Risley would be no problem. Vegans and Vegetarians should love Risley…the Risley team of chefs do such a great job preparing food that has minimal or no allergens and for the most part follows the eating Well at Cornell standards. Plus Risley is known to have has a lot of vegetarian and vegan options!

Happy to say that today was no different! In fact I was surprised by two delicious Vegan Soup choices: a brothy brussel sprout and potato soup and a rich red bean & tofu gumbo. Both were flavorful and very hearty…& look ma no meat!

The salad bar was full and everything looked fresh (thanks to Sean who always greats you at the door with a huge smile.) I had a mixed green salad with lots of choices of beans, seeds, fresh and dried fruit as well as a good choice of vegetables including some roasted spiced cauliflower. I had a house made tahini dressing along with some wheat berries to make for a hearty salad. Soup and salad for this kid today and I was full and happy!

Just to note however the stir fry station here is awesome! If you have never been before it’s worth the visit. Tons of choices of fresh veggies, noodles or rice and all of the sauces today were vegan…score. I will be back for that another day! Risley rocks out an A+ for today’s vegan lunch experience!

Gluten free day 2

I had some Chobani at the Dairy Bar to go with my coffee to start the day. There were some GF sandwiches available but I wasn’t feeling like a sandwich for breakfast. The Kashi oatmeal wasn’t certified as GF, so I will have to wait until I venture outside for some more breakfast. I wanted to scope out the Big Red BArn for lunch, so I went there for my omelette (with no ) wrap and GF toast. With some quick questions, I found I would be able to get the famous turkey pot roast sandwich on GF bread for lunch. Yay!  Unfortunatly, Ididn’t make it back to the Barn in time for lunch, so some Tomato bisue soup had to do.

My first Vegan Day

Had a very nice vegan lunch at Bethe House today, Soup, Salad, Bean stew, Roasted potato and Carrots, and topped it off with a small piece of apple pie. yum yum

Dinner was great also, I had a lentil stew over brown rice, actually went back for seconds. I have a nice vegetable medley and some peaches for dessert.

The pizza looked very good, but I can have that next week, maybe we can do a vegan pizza, that would be nice.
We also had a nice garden burger at the grill and fries I also missed my vanilla milkshake, but actually I feel very satisfied. not bad for my first day, I look forward to tomorrow.
