Chicken Sicilian and Beef and black bean chilli were spicy and good today at Becker–no gluten; no dairy.
Dairy Free Pizza?
What a treat! Pizza for lunch at North Star without cheese. I went to the pizza station to see how they could fulfill my pizza craving without breaking my Dairy Free diet. Chris at the pizza station ask what I wanted and I said surprise me. Surprise me he did. I did some forging at the Chefs Table, Asian Station and Kosher (luckily it was dairy free today) coming away with several dairy free options to my liking such as green bean, sprouts, and quiche. I got the sign that pizza was ready and returned to the pizza station. Chris had prepared a beautiful pie consisting of “secret sauce”, extra virgin olive oil, fresh garlic, and fresh basil finished with salt and pepper. Few ingredients, but more flavorful than you can imagine. This one definitely needs to be added into the pizza rotation.
A One Bowl Meal
No matter what your dietary restrictions are, the stir fry option at Risley Dining can accommodate your needs with big bold flavors emanating from an assortment of sauces, spice, vegetables, fruits and protein that make a complete meal in the bowl. A meal composed at the stir fry station at Risley is a pleasantly addicting experience. always ending on a high note!
Pass the bread and the Lactaid
Today is a bread kind of day. First, I ended up sampling many day old gluten free breads and sandwiches to decided which one holds up better in the cooler and wrapped in plastic . Then I ate a bowl of dry Froot Loops, followed by a flour tortilla from Finger Lakes Fresh. What could be better than a plate full of focaccia bread, Tuscan Cauliflower and and apple. The bread just looked good today. I think I’m good with carbs for the rest of the day.
Unfortunetly, this will be my last post of the 5 Days. Gideon hasn’t seen his grandparents in quite some time, so tomorrow we will be traveling to the western part of NY for some quality family time. I too will be visiting with my grandparents tomorrow for lunch. They have told me that we are having pizza. Now, this posses a few questions. 1. I can try to explain what I’m doing with being dairy free this week, which I already know the response I’ll get “What do you mean you can’t eat dairy; that’s the craziest thing I’ve ever heard”, plus it’ll turn into a three hour conversation trying to get them to understand what dairy free is. 2. The wrath I’ll get for not eating the pizza. The wrath of my grandparents lasts a long time, something I don’t want to get into when they’re getting up there in age. Part of the wrath is not receiving birthday cards filled with cash; and we all know how much fun that is. So, tomorrow, pass the Lactaid, I’m eating the cheese!
No cookies, cakes, brownies or croissant….boo hoo
Forget all the traditional bakery sweets if you’re doing gluten and dairy free foods, BUT….fruit is always a great option for your sweet cravings :-)..apples, bananas, pears, oranges are available at all board plan units.
Gluten & Dairy-free double checks…
Staff members Bonnie Fenton, Charles Crispell, and Terri Silba check the ingredient label on breakfast sausage. Ground, processed meats often have dairy and wheat protein stabilizers, but the sausage on north campus is “clean”!
Oatmeal, although it does not contain wheat proteins, is usually processed with wheat, so unless the oatmeal label says “gluten free”, you should avoid it.

There are plenty of breakfast options at North Star for breakfast especially if you are a high-protein type. Two kinds of eggs, home fries, and pork sausage.
Detox with Team Dairy
After endless meals of fatty pig, I’ve decided to have a detox lunch with a meal that was geared towards the glutens of yesterday; Steamed Haddock with Tarragon & Lemon, Edamame Beans and steamed Cauliflower, and of course a baguette. I enjoyed my lunch with the company of most of Team Dairy; Ed, Jill & April (I’m sure the others were disappointed that they didn’t make it today). Although I’ve been finding many alternatives to Dairy, the one craving that I can’t quite fulfill is jumbo cookies and cupcakes. The mid afternoon treat that helps me to plow through the last couple of hours; Stacy’s pita chips and Cookie Crisp cereal doesn’t stimulate the pancreas as much as the dairy laced cupcakes do.
Lunch on the Go!
Trillium has a number of homemade and healthy salad food options. It does not matter if you’re watching your waistline or looking to indulge in a well spiced hearty meal, it is definitely the place to have lunch. I was in-between stops and needed a Dairy free option to satisfy my taste buds. Trillium did not disappoint with its fantastic Garden burger and fries!
Best Meal Yet!!
So who says a Gluten/Dairy free diet has to be bland and boring?? I was starting to think so … eating apples and bananas with peanut butter, and all those plain vegetables blahh…..
But fear not, today I made it to Risley Dining for a “Lunch Extraordinaire.” Who knew Tuan Tran could fry up delectable scrumptiousness from rice noodles, kimchi, edamame, mushrooms, broccoli, carrots and chinese cabbage – topped with GF sweet soy sauce, and a dab of red curry sauce? I carried on so about how good it was the rest of my table mates had their personal variations whipped up. It might be a secret how fabulous this station is, however, the enthusiasm, motivation, and readiness to make your stir fry exactly the way you want by the cook should not be. It was so yummy I forgot that I was pining for a piece of crusty bread and a big chunk of cheese!
