Vegan for 5 Days

I know we were to eat the way of your diet on campus while on campus.  Like others, I decided to eat my diet, Vegan all day for 5 Days.  I tell the staff my diet and they ae very helpful.   I am hopeful that they act this way with any special request.  Today I went to Trillium for breakfast and Ivy Room for lunch.   I ate oatmeal for breakfast and a salad with tofu for lunch.   Both were more than satisfactory.   I am going to go to N Star for dinner later this afternoon.  If I remember, I will take a picture.  Loving this! Started my day off with a cup of Life cereal, no milk and a cup of Starbuck’s coffee. So far, breakfast is easy, let’s see what lunch bring me today.

Need Energy

breakfast 3.4.12Last night I wanted to and felt like going to bed at 6:30pm. I’ve associated my energy depletion to the lack of dairy I’m consuming; I was trying to explain this theory to my wife, but she wouldn’t buy it.  If this project were to go on longer than 5 days, I would need to negotiate a shorter work day.  Since it’s only day 2, negotiation of a shorter work day is probably just wishful thinking, so to try to up my energy for this morning I opted for a Trillium omelet.  This eggwhite omelet, loaded with green peppers, sausage and vegan cheese not only tasted good but will hopefully provide the punch I need to go fry donuts for today’s Shrove Tuesday menu.  The vegan cheese melted and tasted like USA cheese.  American cheese isn’t really a favorite of mine, but considering the circumstances I didn’t mind the taste, but I’m sure the fat from the sausage helped to make this more enjoyable.  The meal was rounded out with homefried potatoes and orange juice.

Gluten Free Day1

Breakfast at Synapsis: western omelette wrap (sans wrap) and GF bread. The protein helped me stay satiated until…

Lunch at North Star with the whole GF team.  There is a GF cooler and area by the salad bar with a GF toaster and yummy brownies (also found in retail units).  We all had a variety of salad bar, taco bar, kosher and hot line items. The Chicken and Rice soup was delicious!

Late Breakfast Early Lunch – Dairy Free

Sage introduced a yogurt & fruit bar this morning. When I was there looking over the options, I already knew the answer to my next question “Where is the dairy free yogurt”?  Clearly, we don’t have dairy free yogurt.  I piled fresh fruit high into a cup, picked up a Brainy Oats oatmeal to go and a drip coffee with Vanilla Soy.  After going through the cash register and paralyzing my wallet at a whopping $9.73, I quickly ate my meal.  I took a deep breath in right before my first sip of coffee and soy mixture, and I started to think that the room temperature-shelf stable-citric acid creamer isn’t so bad now.  To my surprise, the coffee with soy milk wasn’t as terrible as I thought it would have been.  I wasn’t able to drink the entire 12 ounce cup though; this might be the week where I cut down on my coffee consumption.  Is it coincidence that Lent begins this week?

Day one on Team Vegan….I began my day at North Star with a cup of coffee this morning and I had my choice of Soy or Rice Milk to replace my milk. OK this is not so bad!  Walking by though I had to say “Back away from the omelet station!” Eggs, cheese, meat…all my normal breakfast friends. So what am I going to eat? I asked Danielle in the Chefs Kitchen to help me find some Vegan options. She directed me to the hot oatmeal station or the homefries on the hot line, additionally she told me about the fresh fruit bar, assorted cereals, and bagels. I went for the fresh fruit bar and had a bowl of oatmeal with strawberries. Feeling good and full! In a vegan world though I can see that this may get a little boring. Having cooked at Risley I know of plenty of vegan lunch and dinner options, but we didn’t serve breakfast. I guess I’m going to consult my vegan friends and see what they do for breakfast!

Yogurt day 1I started out the 5 days of kosher with a healthy Chobani yogurt and a cup of starbucks coffee.  It will be a fun week of Kosher. Next stop, 104 West for lunch with Team Kosher

Finding a Gluten-Free Breakfast

On cold mornings, oatmeal is my go-to breakfast, and while oats don’t have wheat gluten, I don’t have certified gluten-free oatmeal on hand. (Cross contamination at cereal manufacturing plants is a serious concern.) Cold cereal? Definitely out!

I didn’t prepare very well for breakfast Day 1 of the 5 Days challenge, though I do know there are gluten-free cereals and oatmeals to be found. I can also swing by one of the cafes and grab a container of yogurt, or maybe a banana.

What’s in my refrigerator? Hummus! Middle eastern cultures have hummus for breakfast all the time, and Sabra’s web site confirms that their products are gluten free!

A handful of peanuts will make a nice supplement, since I’m not going to be able to put the hummus on a roll or a slice of bread. I do have a box of gluten-free crackers, but I’m saving those for this nice block of cheese…

Looking for Kosher breakfast items

I plan on stopping at Duffield Hall and Mattin’s Cafe for breakfast. Probably going to pick up some Chobani yogurt. I am sure there will be other kosher options available.

5:37 AM Cereal

I normally begin my day with a bowl of cereal at 5:30am.  Right before reaching for the milk, I realized that I choose not to eat Dairy this week. This posses a big problem when it comes to choices in my refrigerator.  I have cranberry juice, prune juice or water.  There is just something not right about Cherrios floating in a red liquid in a semi lit kitchen, it’s almost something out of a horror show.  I decided I wasn’t desperate enough to eat cereal with the above choices; I ate it dry….for now.
