Had a very nice vegan lunch at Bethe House today, Soup, Salad, Bean stew, Roasted potato and Carrots, and topped it off with a small piece of apple pie. yum yum
Dinner was great also, I had a lentil stew over brown rice, actually went back for seconds. I have a nice vegetable medley and some peaches for dessert.
The pizza looked very good, but I can have that next week, maybe we can do a vegan pizza, that would be nice.
We also had a nice garden burger at the grill and fries I also missed my vanilla milkshake, but actually I feel very satisfied. not bad for my first day, I look forward to tomorrow.
Most commercially produced pie crusts list some type of animal fat (or by-product) among the ingredients. Are you sure that your apple pie was vegan?

Thanks, L! I just double-checked with Lee, the Chef Manager at Jansen’s Dining Room at Hans Bethe House, and he confirmed that the packaged pies and crusts Cornell Dining uses are vegan. Lee says, “It was one of the criteria we used when we were deciding which brand of pie to serve.”
