Origin: Domesticated in the Andean region of S. America.
Biophysical Requirements: A C3 species that is quite tolerant of cold growing conditions. Seeds have a coating of bitter‐tasting saponins, which repels birds and is removed post‐harvest for human consumption.
Food Uses: Its cooked seeds have a palatable aroma and texture; seeds consist primarily of starch, with 6% fat and 14% protein, which has a ratio of amino acids closely matching human requirements.
