Biophysical Requirements:  A cool‐weather plant, which grows best under cool to moderate summer temperatures, the potato produces a starchy underground tuber. Leading producers are China, northern and eastern Europe, India, and USA.

Food Uses: A potato contains 78% water, 2% protein, and 18% carbohydrates. It is adapted to fertile soils with a pH of 5.0 to 5.5 for disease retardation.
