Meatless Monday: Breakfast Edition

Are you looking for new breakfast ideas? Are you looking for ways to incorporate more fruits and vegetables into your diet? As part of our Meatless Monday recipe series, we are going to share some delicious meatless breakfast recipes with you. 

The Meatless Monday Campaign encourages people to skip meat one day each week. This small change has both health and environmental benefits. It can also be an opportunity to try something new! If you are interested in learning more about the health benefits and common myths regarding vegetarian diet, you can refer to our posts on The Basics and Nutrients of Focus from our vegetarian diet series. 

This first recipe is quick and easy to prepare if you are interested in being more creative with your breakfast. 

 Recipe adapted from Meatless Monday Campaign

Serves 1

Ingredients:

  • 1 sweet potato
  • 1 medium banana, sliced, or fruits of your choice
  • 1-2 Tbsp peanut butter
  • ½ Tbsp chia seeds (optional)
  • ¼ tsp ground cinnamon 

Directions:

  • Wash and dry the sweet potato.
  • Poke holes in it with a fork,wrap it in a wet paper towel.
  • Cook in the microwave until you can stick a fork all the way through and the potato feels soft. About 8-10 minutes in the microwave.
  • Carefully cut the sweet potato in half and place banana slices on the sweet potato. Then drizzle the peanut butter on top, followed by the chia seeds and ground cinnamon.
  • You can also be creative and add your own toppings!

Serves 4

Ingredients*:

  • 1 tablespoon olive oil or other oil of choice
  • 1 onion, chopped
  • 2 cups mushrooms, sliced
  • 2 pounds firm tofu, drained and crumbled
  • 1/4 teaspoon salt
  • black pepper, to taste

*feel free to add other vegetables

There are different ways to season the breakfast scramble. Be creative and experiment with spices as you wish. Below is one example of how you might flavor the dish. 

Suggested spices:

  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1 Tbsp ground cumin
  • 1 Tbsp ground turmeric
  • 1/2 cup nutritional yeast

Prep the tofu:

Before mashing the tofu into the scramble, you might want to prep it to remove the extra water. You can do this by covering the tofu with paper towels, place a flat surface on top (for example, a book), and then add additional heavy items to weigh it down and force water out of the tofu. 

Directions:

  • Heat the oil in a large sauté pan over medium heat. 
  • Add the onions and mushrooms to the pan and cook 5-7 minutes, or until softened.
  • Add the crumbed tofu to the sauté pan. 
  • Season tofu mushroom mixture with spices of your choice 
  • Sauté for about 5 minutes, or until thoroughly combined.
  • Sprinkle scramble with nutritional yeast, serve and enjoy!
