Robin talks at the World Science Festival in NYC on our sense of taste, and why food is so important to us all.
The event was the first dinner of its kind for the World Science Festival, now in its sixth year, attracting celebrities including “Modern Family” star Sofía Vergara and “Chopped” host Ted Allen. The multicourse meal covered topics like fermentation, olfaction and the Maillard reaction, with dishes from Dufresne (WD-50-style “eggs Benedict”), Najat Kaanache (a “mini-genius apple” made of fresh, dehydrated, freeze-dried and transmuted green apples) and Maxime Bilet (an artful “noble roots” dish of roasted, caramelized and glazed roots). Servers brought out nitrous oxide cocktails and dry-ice platters. – Wall Street Journal
