Justine Vanden Heuvel and Kathy Arnink are offering a new course, Food Science 4940, an introduction to growing grapes and making wine organically. This is a one credit discussion course. Students will read and critically evaluate papers on growing grapes organically and producing organic wines. Related topics, such as sustainability, biodynamic farming and spontaneous fermentations, are also likely to be discussed. Students will perform literature reviews, read scientific papers and some popular press articles, and lead class discussions on the papers chosen. This course will meet for one hour per week, on Thursdays from 12:20 to 1:10 p.m.
This course can be taken as the sole organic V&E course, or as preparation for taking a full year practical course planned to start in Fall 2010 (more on these courses later).
