Differentiation of Lager Culture Yeast Strains by Selective Dye Inhibition

Methods of distinguishing between different lager strains were compared. Multiple carbon source strips and electrophoresis of yeast proteins did not show differences with the three strains examined. Nine dyes were tested for ability to distinguish between the three strains. Crystal violet, methyl red and methyl violet B showed some differences, but the concentration range between the minimum inhibitory concentrations for the different yeasts for two of the dyes was small. Methyl red showed a wider range and a spot test based on its use was developed to distinguish between pure samples of culture yeast. The test is not suitable for detecting the presence of one yeast in another yeast.
