New Resources for Artisan Producers

Our Dairy Extension Group has been very busy over the past 6 months developing a very useful webpage that has many resources to help the Industry in producing Food Safety Programs for your facility.

Once you arrive at the website proceed to the Resources’ page. There you can find information on Regulations and Standards of Identity, Food Safety Programs and Cornell Dairy Factsheets.

We also provide templates and examples of flow diagrams, hazards, prerequisite programs, GMPs, SOPs and many other great references.  All of which can be found at http://dairyextension.foodscience.cornell.edu/resources/food-safety.

All of these resources can help and guide you through putting together a comprehensive Food Safety Program for your facility which will help you prepare for a 2nd party and/or a 3rd party audit.

We have also been working on a Level 1 Audit format for Artisans that will be used by the Industry in order to allow Artisans to supply the major grocery store chains. This Level 1 audit is the first step in preparing your facility for a more stringent 3rd party audit in the future that would meet any of the Global Food Safety Initiative schemes.

Last December we offered for the first time a “hands on” Artisan Food Safety Systems workshop that received high reviews by the participants. We will offer this course again in December of this year.

We will also be launching some online workshops this year, that will include a day of online participation and then 1-2 days on campus for the hands on activities.
